Zucchini Bread

Combine:

1 1/4 Cups unpeeled grated zucchini

2 Large Eggs

1/3 Cups Oil

1/2 Cup Honey or Sugar

*2 Tablespoons Orange Juice for Chocolate Bread or 

*4 Tablespoons for Multigrain Bread

1 Tablespoon Orange Zest

1/2 teaspoon Cinnamon

1/4 teaspoon Grated Nutmeg

1/8 teaspoon Ground Cloves

Optional: 1/2 Cup Chopped Nuts

Mix in 2 Cups NanaCakes Chocolate or Mulitgrain mix. 

Blend thoroghly until all dry ingredients are mixed with the wet ingredients.  Mixture will be lumpy.

Pour into a greased 8x4x2 loaf pan or muffin tins.  Bake at 350 degrees.  Reduce to 325 if using a glass or dark finish pan.

Bake loaf for 50-55 minutes, muffins for 18-20 minutes, and mini-muffins for 10 minutes.  Test with a toothpick for doneness.

Glaze: Mix 1/2 cup powdered sugar with 1 to 2 tsp. orange juice.
