Chocolate Apple Sauce Pancakes

Mix together:

1 Cup NanaCake Chocolate Mix

1/2 Cup Ela Farms Applesauce

  1/3 Cup Water

1 tsp. Vanilla

Cook pancakes on a preheated and oiled skillet or griddle.


Chocolate Banana Bread

Mix together:

1 Cup Mashed Ripe Bananas (about 2 medium bananas)

     2 Eggs

1/3 Cup Oil*

 1/3 Cup Honey or Sugar *

1 tsp. Vanilla

Stir in:

2 Cups NanaCakes Chocolate Mix

1 Cup Chocolate Chips (optional)

*for a lower fat version, replace the Oil and Honey with 1 cup applesauce

Pour into a greased 8x4x2 loaf pan. Bake at 350 degrees for about 50 minutes until a toothpick inserted in the middle comes out clean.  Reduce to 325 degrees if using glass or dark finish pan.  Cool in loaf pan on wire rack for about 15 minutes before removing from pan. *Also makes great Muffins. Pour batter into a gallon size zip top bag.  Cut corner and squeeze into muffin pan. Bake at 325 degrees for 22 minutes, 12 minute for mini– muffins.

Chocolate Chip Bundt Cake

 Mix all ingredients:

3 Cups Chocolate NanaCake Mix

1 Package Instant Chocolate Pudding

4 Eggs

1/3 Cup Olive Oil

1/2 Cup Honey

1 tsp. Vanilla

1 Cup Water

(optional) 1 Cup Mini Chocolate Chips or frost with Chocolate Ganache

Bake in a greased and floured Bundt pan at

325 degrees for 50 minutes.

Chocolate Ganache:  Slowly melt 1 cup chocolate chips.  Stir in 1/3 to 1/2 milk.  Do not boil.


Chocolate Brownie Cake

Mix together:

1/2 Cup Water

1/2 Cup Apple Sauce

1/2 Cup Honey

1 tsp. Vanilla

Stir in:

2 Cups NanaCake Chocolate Mix

Bake in a greased and floured 9” round or heart shaped cake pan at

350 degrees for 40-45 minutes.Test with toothpick. Because this is a very dense moist cake, the edges will draw away from the pan when done. 

Cool in pan on cooling rack for 15 minutes. Run a knife around the edge of cake to loosen, and then invert onto the cooling rake.  When cake is cook, invert onto a cake plate.

Can double recipe for a two layer cake.  Top with fruit, dust with powdered sugar or frost and serve.

 

Chocolate Chocolate Chip Cookies

Cream together:

1/2 Cup Butter

1/2 Cup Brown Sugar (optional)

1 Egg

1 tsp. Vanilla

2 Cups NanaCake Chocolate Mix

1/2 Cup Chocolate Chips or white choc. chips

Optional: Add 1/2 Cup chopped nuts

or raisins.

Bake on a greased cookie sheet at

350 degrees for 10 minutes.


Chocolate Chocolate Chip Muffins

 Mix all ingredients:

2 1/2 Cups Chocolate NanaCake Mix

2 Large Eggs

1/2 Cup Water

                                               1/3 Cup Olive Oil

                                               1/3 Cup Honey

                                               1 tsp. Vanilla

               1 Cup Mini Chocolate Chips (optional)

 Mix all ingredients and pour into Large zip top back.  Cut off small corner and squeeze into muffin pans. 

Bake at 350 degrees. Bake 20-22 minutes for standard size muffins, 12-14 minutes for mini muffins. 


Chocolate Sandwich Cookies

Cream together:

1/2 Cup Butter

1 Egg

1 tsp. Vanilla

Add:

2  Cups Chocolate Multi-Grain NanaCake Mix 

Roll out dough and cut with cookie cutters or round biscuit cutters.  Bake at 350 degrees for 10-12 minutes.  Let cool and spread filling between two cookies.

Cookie Filling Ideas

Cream Cheese and Honey: 

1 package cream cheese, 1/2 cup Honey or other sweetener.  Mix and spread between two cookies.

Peanut Butter

Chocolate or Vanilla Frosting


Coconut Chocolate Cookies

Cream together:

1/2 Cup Coconut Oil

1 Egg

1 tsp. Vanilla

Stir in and mix well:

2 to 2 1/2 Cups NanaCakes Chocolate Mix

Add:

1/2 Cup Chocolate Chips

1/2 Cup Sweetened Coconut Flakes

Mixture will seem crumbly.  Form into small balls. Place on greased cookie sheet.  Bake at 350 degrees for 9-10 minutes.  Makes about 3 dozen cookies.


Chocolate Crepes

 Mix all ingredients:

1 Cups Chocolate NanaCake Mix

2 Large Eggs

1 Cup Water

                                               1Tbsp Olive Oil

Cook at medium high heat on a smooth non-stick skillet spritzed with oil.  Pour 1/3 to 1/2 cup of batter in center of the pan.  It should sizzle as you pour it.  Tilt the pan to spread batter.  Cook until top is almost dry.  Loosen entire crepe with spatula and turn.  Roll or fold to remove from pan.

Recipe makes 7 (8 inch crepes).


 Chocolate Fudge Cake

Mix all ingredients:

2 Slightly Beaten Eggs

1/3 Cup Sugar

1/3 Cup Oil

                                               1/3 Cup Water

                                               1 tsp. Vanilla

                                               2 Cups Chocolate NanaCake Mix

 Bake in a greased and floured 8” square pan at 325 degrees for 30 Minutes.  Let cool before frosting with Chocolate Fudge Frosting.

 

Chocolate Fudge Frosting

 Mix together in a 2 quart saucepan:

1 Cup Sugar

1/4 Cup Cocoa

1/4 Cup milk

1/2 Cup sweet cream butter 

Start cooking when the cake is almost cool.  Cook over medium heat.  Bring to a boil and boil for one minute.  Remove from heat.  Stir in 1 tsp. Vanilla.  Beat until mixture starts to cool and thicken.  This takes time.  If the mixture is under beaten it will be grainy because of crystallization.


 NanaCakes Low fat Brownies

In a Food Processor, Grind:

12 Pitted Dates

1 Cup Applesauce

Add:

     1 Egg Yolk

 1 tsp. Vanilla

1 Tbsp. Agave or Honey

2 Cups NanaCakes Chocolate Mix

3/4 Cup Chocolate Chips (optional) 

Pour into a greased 8x8 square pan. Bake at 350 degrees for about 25 minutes.  


Chocolate Pancakes & Waffles

Mix all ingredients:

1 Cups Chocolate NanaCake Mix

1 Large Egg

1/2 Cup Water

                                               1 Tbsp Olive Oil

                                               1 tsp. Vanilla (optional)

Cook on a preheated oiled skillet or griddle.

Recipe makes 8 (4 inch pancakes) or

4 ( 6 inch waffles)

Nana ideas: Top with Vanilla yogurt and fresh berries!


Chocolate Multi-Grain

Pumpkin Bread

Mix together:

1 Cup Canned Pumpkin

2 Eggs

1/2 Cup Apple Sauce or Oil

1/2 Cup Brown Sugar

1 tsp. Vanilla

2 tsp. Pumpkin Pie Spice

2 Cups NanaCakes Chocolate MG Mix

Optional: add 1/2 cup dried or fresh cranberries.

Pour into a greased 8x4x2 loaf pan. 

Bake at 325 degrees for about 60-65 minutes until a toothpick inserted in the middle comes out clean. 

Cool in loaf pan on wire rack for about 15 minutes before removing from pan. 

*Also makes great Muffins. Pour batter into a gallon size zip top bag.  Cut corner and squeeze into muffin pan. Bake at 350 degrees. Bake regular muffins 30-35 minutes (makes 24), or mini-muffins 11-13 minutes (makes 48 mini-muffins)

*For sweeter bread, top bread with cream cheese glaze.  Recipe on Multi-Grain Recipe page.

 

Zuccini Bread

 

Combine:

1 1/4 Cups unpeeled grated zucchini

2 Large Eggs

1/3 Cups Oil

1/2 Cup Honey or Sugar

*2 Tablespoons Orange Juice for Chocolate Bread or 

*4 Tablespoons for Multigrain Bread

1 Tablespoon Orange Zest

1/2 teaspoon Cinnamon

1/4 teaspoon Grated Nutmeg

1/8 teaspoon Ground Cloves

Optional: 1/2 Cup Chopped Nuts

Mix in 2 Cups NanaCakes Chocolate or Mulitgrain mix. 

Blend thoroghly until all dry ingredients are mixed with the wet ingredients.  Mixture will be lumpy.

Pour into a greased 8x4x2 loaf pan or muffin tins.  Bake at 350 degrees.  Reduce to 325 if using a glass or dark finish pan.

Bake loaf for 50-55 minutes, muffins for 18-20 minutes, and mini-muffins for 10 minutes.  Test with a toothpick for doneness.

Glaze: Mix 1/2 cup powdered sugar with 1 to 2 tsp. orange juice.
