Breads & Muffins

Multi-Grain Honey Muffins

Beat together:

2 Large Eggs

1/2 Cup Water

/3 Cup Honey

1/4 Cup Oil

1 tsp. Vanilla

Stir in:

2 Cups NanaCakes Multi-Grain Mix

Optional Additions: 1/2 Cup baking chips, nuts or raisins.

Bake at 350 degrees in greased or lined muffin tins.  Bake 18-20 minutes for standard muffins, 8-10 for mini-muffins. 

Variations:

Honey Spice MuffinsIncrease honey to /2 cup and and 1 tsp. ginger and 1/2 tsp. cinnamon to wet mixture.

Gingerbread Muffins: Using the honey spice recipe, substitute molasses for the honey.

Lemon Poppy Seed Muffins: Substitute Lemon extract for the vanilla and add 1 Tbsp. poppy seeds.

Orange Poppy Seed Muffins: Substitute Lemon extract for the vanilla and add 1 Tbsp. poppy seeds. Add one 4oz. Mandarin orange fruit cup and reduce water to 1/4 cup.


Multi-Grain Apricot Muffins

In a Gallon Size Zip lock Bag, add the following ingredients:

2 1/2 Cups NanaCake Multi-Grain Mix

1/2 Cup Apricot Preserves

In a separate bowl, mix:2eggs

1/2 Cup Water

1/4 Cup Honey

 

Add wet ingredients to bag and seal bag.  Squeeze bag until all ingredients are mixed together. Cut small corner off bottom of bag and squeeze batter into greased or papered muffin cups.  These make great mini-muffins!

Bake at 350 degrees, 10-12 minutes for mini muffins, and 18 minutes for full size muffins.


Multi-Grain Banana Bread

                                                          Mix together:

Buttermilk-Banana-Bread

1 Cup Mashed Ripe Bananas (about 2 medium bananas)

1 Egg

1/3 Cup Oil

1/2 Cup Honey or Sugar

1 tsp. Vanilla

Stir in:

2 Cups NanaCakes MG Mix

1/2 Cup Chopped Nuts (optional) 

Pour into a greased 8x4x2 loaf pan.  

Bake at 350 degrees for about 45 minutes until a toothpick inserted in the middle comes out clean. 

Cool in loaf pan on wire rack for about 15 minutes before removing from pan.

 

Betty in Tennessee  suggest using APPLESAUCE instead of oil, and says EGG SUBSTITUTE also works great in place of the egg.


Multi-Grain Berry 

Chocolate Love Muffins

Beat together:

2 Large Eggs

1/2 Cup Water

1/2 Cup Agave or Honey

2 Tbsp. Oil

 tsp. Vanilla

Stir in:

2 Cups NanaCakes Multi-Grain Mix

Add:

1 Cup Frozen Mixed Berries (Microwave fruit for about 20 seconds then chop up slightly) 

Optional Additions: 1/2 Cup baking chips or nuts

Bake at 350 degrees in greased or lined muffin tins.  Bake 18-20 minutes for standard muffins, 10-12 for mini-muffins.


Multi-Grain Cranberry Bread

Mix together:

1/4 Cup Honey

1 Cup Chopped Fresh Cranberries

In separate bowl, beat together:

2 Eggs

1/2 Cup Water

1/4 Cup Honey

1/4 Cup Oil

1 tsp. Vanilla

Stir in:

2 Cups NanaCake Multi-Grain

Mix

Add:

Cranberry mixture

Bake at 350 degrees in 8x4x2 greased loaf pan for 50-55 minutes until a toothpick inserted in the middle comes out clean. 

  If using a glass pan, reduce temperature to 325 degrees.

 

Orange Poppy Seed Muffins 

Beat together:

2 Large Eggs

1/4 Cup Water

1/4 Cup Oil

1/3 Cup Honey or Sugar

1 Tbsp. poppy seeds

1 tsp. lemon extract

1 4 oz. Mandarin Orange Snack Cup

(preferably in fruit juice)

Stir in:

2 Cups NanaCakes Multi-Grain Mix

Bake at 350 degrees in greased or lined muffin tins for about 20 minutes.  Makes 12 standard muffins.

 

 

Multi-Grain Pumpkin Bread

                                                           Mix together:

                                                           1 Cup Canned Pumpkin

1/2 Cup Apple Sauce or Oil

1/2 Cup Brown Sugar

1 tsp. Vanilla

                                                           2 tsp. Pumpkin Pie Spice

                                                           2 Cups NanaCakes MG Mix

                                                   Pour into a greased 8x4x2 loaf pan.  

Bake at 325 degrees for about 50-60 minutes until a toothpick inserted in the middle comes out clean. 

Cool in loaf pan on wire rack for about 15 minutes before removing from pan.

*Also makes great Muffins. Pour batter into a gallon size zip top bag.  Cut corner and squeeze into muffin pan. Bake at 325 degrees. Bake regular muffins 30 minutes or mini-muffins 10-12 minutes.

*For sweeter bread, top bread with cream cheese glaze.


 Zucchini Bread

 

Combine:

1 1/4 Cups unpeeled grated zucchini

2 Large Eggs

1/3 Cups Oil

1/2 Cup Honey or Sugar

*2 Tablespoons Orange Juice for Chocolate Bread or 

*4 Tablespoons for Multigrain Bread

1 Tablespoon Orange Zest

1/2 teaspoon Cinnamon

1/4 teaspoon Grated Nutmeg

1/8 teaspoon Ground Cloves

Optional: 1/2 Cup Chopped Nuts

Mix in 2 Cups NanaCakes Chocolate or Mulitgrain mix. 

Blend thoroghly until all dry ingredients are mixed with the wet ingredients.  Mixture will be lumpy.

Pour into a greased 8x4x2 loaf pan or muffin tins.  Bake at 350 degrees.  Reduce to 325 if using a glass or dark finish pan.

Bake loaf for 50-55 minutes, muffins for 18-20 minutes, and mini-muffins for 10 minutes.  Test with a toothpick for doneness.

Glaze: Mix 1/2 cup powdered sugar with 1 to 2 tsp. orange juice.
