Apple Sauce Pancakes


Follow multigrain pancake recipe below but replace:

  Egg and oil with 1/2 Cup Applesauce

Multi-Grain Pancakes

& Waffles


Mix together:

1 Large Egg

3/4 Cup Water

1 Tbsp. Oil

1 Cup NanaCake Multi-Grain Mix

*Optional: add 1 Tbsp. Honey or Sugar and 1 tsp. vanilla

Cook on preheated oiled skillet or griddle. Recipe makes 8 (4 inch pancakes) or

4 (6 inch waffles)

Multi-Grain Crepes

Mix together:


2 Large Eggs

1 1/2 Cups Water

1 Tbsp. Oil

1 Cup NanaCake Multi-Grain Mix

More water may be added if a thinner crepe is desired.Cook at medium high heat on a smooth non-stick skillet spritzed with oil.  Pour about 1/3 to 1/2 cup of batter in pan and tilt until it spreads to all edges.  Cook until top is almost dry.  Loosen entire crepe with spatula and turn.  Roll or fold crepe to remove from pan. Serve with sweet or savory fillings. Look on the savory multigrain recipes page for ideas.


Smoked Salmon Crepe

Crepes can be made ahead of time and refrigerated or frozen.  Cool completely on cooling rack and separate crepes with parchment or wax paper before refrigerating or freezing.

Place room temperature crepes on a plate.  Spread 3-4 tablespoons of creme fraiche or softened cream cheese down the center.  Fold the short edges of the crepe over the filling then the longer edges making an envelope.

Arrange the smoked salmon on top.  Garnish with julienned radish or cucumber strips and capers.

Multi-Grain Pumpkin Pancakes


Mix together:

1 Cups Water

1 Large Egg

1 Tbsp. Honey

1 Tbsp. Oil

1/4 Cup Canned Pumpkin

1/2 tsp. Pumpkin Pie Spice

1/2 tsp. Vanilla

Blend in:

1 Cup NanaCake Multi-Grain Mix

Cook pancakes in a greased skillet  or griddle heated to medium-medium hot.

Makes about 18 three inch pancakes.

Serve with your favorite toppings such as maple syrup, sauteed apples, whipped cream,  sprinkled with cinnamon and sugar and chopped pecans!


Multi-Grain Ricotta Pancakes


(This recipe comes from Kris in Texas)

Seperate 3 Large Eggs into two bowls.

Beat the 3 Egg Whites until Stiff.

Add the following to the  Egg Yolks and Mix

1 Cup Ricotta Cheese

3-4 TBSP. Powdered Sugar

1/2 Cup NanaCakes Multi-Grain Mix

Fold the Egg Whites into the Yolk and Cheese Mixture.

Spoon and spread the batter on a greased skillet or griddle preheated to medium heat.

Makes about 12-15 small pancakes.

Maple Cream: Mix maple syrup with your favorite plain yogurt to the sweetness you prefer.  We like Greek Yogurt.

On a hot griddle, belt butter or oil.  Spoon the batter onto the griddle.  Flip when golden brown. Makes 12-15 small pancakes. 

Kris says they like them with strawberries and powdered sugar or Maple Cream (a mix of nonfat yogurt & maple syrup).


Cinnamon Toast Pancakes

Follow Pancake Recipe on back of Multigrain or Oatmeal NanaCakes

Package .

Cinnamon Sugar mixture:

Mix 3 or 4 tbsp sugar to 1 tbsp cinnamon.

Add 1 tsp. of cinnamon sugar mixture to pancakes batter.

Pour on oiled skillet or griddle heated to medium.

Sprinkle the uncooked side with cinnamon and sugar mixture.

Cook until bubbles rise, then turn and sprinkle sugar and cinnamon mixture on the cooked side.

Serve with warm apples and cinnamon


Apples in Cinnamon Syrup:

Melt 2-3 Tbsp. butter in a large skillet.

Add apples slices in a single layer and

stir every few minutes until slightly soft.

Add 1 tsp. cinnamon

1/2 cup brown sugar

1/2 cup water

Cook down to a syrup. If apples become too soft, remove apples and continue to cook syrup to desired consistency.
