Oatmeal Apple Sauce Pancakes

Mix together:

1 Cup NanaCake OatmealMix

1/2 Cup Applesauce (We recommend Ela Farms Colorado Applesauce)

  1/2 Cup Water

1 tsp. Vanilla

 Cook pancakes on a preheated and oiled skillet or griddle.


Nana Banana Oatmeal Bread

Mix together:

1 Cup Mashed Ripe Bananas (about 2 medium bananas)

3/4 Cup water

   1/3 Cup Oil

 1/3 Cup Honey or Sugar

Stir in:

2 1/2 Cups NanaCakes Oatmeal Mix

1/2 Cup Chopped Nuts (optional)

Pour into a greased 8x4x2 loaf pan. Bake at 325 degrees for 50-55 minutes until a toothpick inserted in the middle comes out clean.  Cool in loaf pan on wire rack for about 15 minutes before removing from pan.  *Also makes great Muffins. Pour batter into a gallon size zip top bag.  Cut corner and squeeze into a greased or lined muffin pan. Bake at 325 degrees for 20-22 minutes, 12 minute for mini– muffins.


Breakfast

Granola Bars

Mix together:

2 Cups NanaCakes Oatmeal Mix

1 Cup Chopped Nuts of choice

1/4 Cup Flax Seed Meal

                                   *Optional: Add 1/2 cup baking chips, raisins or dried fruit.

Mix in:

1/4 Cup Oil

1/4 Cup Honey

1/4 Cup Maple Syrup

1 tsp. Vanilla 

 Press mixture into a well greased 9 x 13 pan. Pack down until firm.  Bake at 325 degrees for 20-25 minutes. The baking time will determine if bars are crispy (25min.) or chewy(20min.).  Cool and Cut bars to desired size.  Store in an air tight container.


Oatmeal Butterscotch Bars

Mix together:

1/2 Cup Brown Sugar

     3 Tbsp. Melted Butter

1 tsp. Vanilla

1 Egg

2 1/2 Cups NC Oatmeal Mix

 Press mixture into a greased 8” square pan.  

Next:

1/2 Cup Fat Free Sweetened Cond. Milk

3/4 Cup Butterscotch Morsels

1/4 Cup Chopped Nuts (pecans or Walnuts)

In Microwave safe bowl, warm sweetened cond. milk and butterscotch morsels on high, stirring every 20 seconds until smooth. Add chopped nuts.  Pour over oatmeal mixture.  Sprinkle 1/8 cup NanaCakes Oatmeal mix over top and pat down.  Bake at 350 degrees for 30 minutes. Completely cool , then cut into squares.  If using a glass or dark pan, reduce oven temperature to 325 degrees.


Oatmeal Cookies

Cream together:

1/2 Cup Butter

1/2 Cup Brown Sugar

                                               1 Egg

                                               1 tsp. Vanilla

     2 Cups NanaCake Oatmeal Mix

Optional: 1/2 Cup Chocolate Chips

         1/2 Cup chopped nuts 

   Or 1/2 raisins. 

Bake on a greased cookie sheet at

350 degrees for 10 minutes.  Makes 3 dozen.

 

Oatmeal Lemon Bars

Blend together:

1 Cup NanaCakes Oatmeal Mix

     1/4 Cup Powdered Sugar

1/4 Cup Soft Butter

 Press mixture into a greased 8x8 square pan. Bake at 350 degrees for 20 minutes. Reduce oven temperature to 325 degrees if using a glass or dark pan.

Mix together:

2 Eggs, Beat until Foamy

1 Cup Sugar

2 Tbsp.  NC Oatmeal Mix

1/4 Cup Lemon Juice 

Beat Eggs until foamy.  Add remaining ingredients and mix for 2 minutes. Pour over baked crust and bake an additional 25 minutes.  

Let cool for about 5 minutes, then dust top with powdered sugar.  

Cool in pan on wire rack until bars are completely cool.  Cut into squares and serve.


Maple Pecan Coffee Cake

Combine:

1/2 Cup Maple Syrup                                                  

1/3 Cup Oil

1/3 Cup Water

                                               1 tsp. Vanilla or Maple Flavoring

Stir in:

2 Cups NanaCakes Oatmeal Mix

 Bake at 350 degrees in a greased and floured 9” round cake pan for 25-28 minutes.

Topping:  Put 1 cup coarsely chopped pecans, 1 Tbsp. butter, and 1/4 cup maple syrup in a small sauce pan.  After butter melts, cook 2-3 minutes until mixture slightly thickens.


Oatmeal Muffins

Mix together:

2/3 Cup Water

1/3 Cup Oil

1/4 Cup Honey

1 tsp. vanilla

Stir in:

2  Cups NanaCake Oatmeal Mix 

Pour mix into a Gallon Size Zip lock Bag. Cut small corner off bottom of bag and squeeze batter into greased or papered muffin cups.  These make great mini-muffins!

Bake at 350 degrees, 18-20 minutes for regular size muffins or 10-12 minutes for mini muffins.


Oatmeal Pancakes & Waffles

Mix together:

1 Cup NanaCake Oatmeal Mix

1 Large Egg

                                               3/4 Cup Water

                                               1 Tbsp. Oil

                                               1 tsp. Vanilla (optional)

Cook on preheated oiled skillet or griddle.  Recipe makes 6 (5 inch pancakes)

Or 4 ( 6 inch waffles)

Nana ideas:  Add Banana’s!

Sprinkle with Cinnamon & Sugar!

Top with Applesauce!

Mix together:

1 Cup Canned Pumpkin

2 Eggs

1/2 Cup Apple Sauce or Oil

1/2 Cup Brown Sugar

                                               1 tsp. Vanilla

                                               2 tsp. Pumpkin Pie Spice

                                               2 Cups NanaCakes Oatmeal Mix

Pour into a greased 8x4x2 loaf pan. 

Bake at 325 degrees for about 50-60 minutes until a toothpick inserted in the middle comes out clean. 

Cool in loaf pan on wire rack for about 15 minutes before removing from pan. 

*Also makes great Muffins. Pour batter into a gallon size zip top bag.  Cut corner and squeeze into muffin pan. Bake at 325 degrees. Bake regular muffins 30-35 minutes or mini-muffins 10-12 minutes.
